Single Ferment Series wines contain grapes from more than one vineyard, co-fermented (stacked on top of one another when each becomes ripe) to make one wine with one single fermentation—hence the name.

The Vineyards:

- two vineyard sites in Portezuelo and Guarilihue 60+ years old
- 1,5 hectares + 4 hectares
- old bush-head vines
- granitic soils with lots of quartz
- 1,5 kg per plant / 4,5oo -  kgs per hectare

In a Nutshell:

  • For years we watched as the small farmers with whom we grow the parcel wines were forced to accept prices dictated by the mainstream agro-giants far below their costs for working the earth. So we developed Single Ferments as a dignified means of getting more of their wonderful fruit made into wine for export. The wines are affordable yet we still manage to pay a bonafide price to the farmers.
  • Single Ferment Series wines include fruit from more than one parcel or vineyard site and are (co-fermented) ¨in one singular ferment ¨ Sometimes all the fruit does not enter the tank at same time and we simply stack on top of the fermenting tank when the next fruit is ripe -- one single ferment one single wine. (two vineyard sites in Portezuelo and Guarilihue)

Winemaking:

  • Ancestral farming by hand and horse
  • Naturally fermented with native yeasts
  • Open top fermenters. Caps were punched down by hand. Pressing manual.
  • No temp control (besides opening closing windows) open tank

T a s t i n g   N o t e s

House note:

Dark plums, wet earth, cedar and baking spices. This is a full-bodied cinsault that draws out a round and generous palate, through dark cherries and juicy tannins. Heaps of fruit but with a completely different architecture – this is not a glou glou terrace wine and it does not have carbonic maceration.

Ageability

2018 vintage will age 5-6 years, but the wine is made to be enojoyed beginning today upon release in 2020

Perspective: Our 2015 is beginning to display some tertiary notes and demonstrate that Cinsault can have the architectural structure to improve over several years.

Para Soothsayers Single Ferment Series se seleccionan dos parcelas en Itata, una en Portezuelo y la otra en Guarilihue. El vino se cría por un año en barricas y muestra cómo el cinsault tiene una capacidad impresionante para mostrar estructura, para crear un cuerpo construido a partir de taninos que se perciben firmes y severos, penetrantes y algo rústicos. Una textura para nada habitual en esta cepa, más relacionada con vinos fáciles y frutales. Este es frutal, pero con una arquitectura completamente distinta, hecha de concreto.

Winemaker Derek Mossman told me the 2018 Cinsault The Soothsayers Ferment from their Single Ferment Series was particularly interesting as it was more ambitious, but I find it too rustic and dark, with an unusual animal twist. The fruit gravitates toward the darker side of the spectrum, and it resembles a Cariñena more than a Cinsault. The palate has some powdery tannins and a dusty texture. To be honest, it got me scratching my head; and while it’s not bad, it doesn’t fit the idea I had about this wine or the style of any previous vintage. I left the wine in the glass for a good couple of hours, and it transformed completely: that blackness disappeared, the animal-like aromas disappeared and the wine was completely different! The spark was back, the red fruit emerged and the granite resurfaced in the texture. What a transformation. Sometimes patience gets paid back. This is a completely different expression of Cinsault—more serious, more powerful. Decant for a couple of hours if it shows funny when you open it. 2,960 bottles produced. It was bottled in February 2019.

Cinsault 2017 Single Ferment Secano Interior Portezuelo – Reset Ferment – 92 Pts
The 2017 Single Ferment Series Cinsault has an addition to its name on the label, The Reset Ferment, which is a reference to a reset after the terrible fires from the year. This is definitely more serious than previous editions, possibly a result of the severe selection to avoid smoke. It comes from two vineyards, one in Portezuelo (where the berries are very small) and the other one in the vicinity of Guarilihue. There is an aromatic touch here and a light to medium palate with very fine tannins. 3,543 bottles were filled in February 2018.

Al contrario de nuestros vinos de viñedos, Single Ferment Series contienen fruta de más de una parcela, co-fermentados. Es nuestra manera de comprar más fruta a un precio que nos parece justo para contribuir a más productores en el secano interior", añade. Este cinsault viene de 2 parcelas, una en Hauro y la otra en Guarilihüe, ambas en el Valle del Itata. Y la fruta es deliciosa, fresca, viva. Tiene la suavidad de la cepa, pero también la cascada de sabores a frutas rojas. Uno para beberlo por litros.

This wine was grown by a small farmer in Itata. It was farmed by hand and horse with traditional methods of dry-farming old vines with vines of Cinsault in the field-blend.

It was fermented naturally in small tanks with open-tops. Caps were punched down by hand and pressing was strictly manual. The wine was aged in barrels over two winters— barrels of two or more uses.

This wine is a tribute to the resilience of the ploughmen farmers of the Secano Interior who have been stewards of the vines since colonial times. Portezuelo was the site of the first winery in Chile. The 58th wine we have bottled since 2001 it is thus labelled Lot # 58.

The 2014 Portezuelo Vineyard, a Cariñena field blend planted in the early 1940s with some Cinsault from the Lavin family in Itata. The vineyard is on the initial slopes of the Coastal Range and enjoys shade early in the afternoon due to its exposure facing east. It compensated for the relative warmer temperatures from Portezuelo. Some people dismiss it because it's a warm place, but it really keeps the freshness. It's more Mediterranean with notes of dried herbs and spices, quite balsamic. The palate has the austerity and tastiness of the granite. 2,170 bottles were filled in December 2015. I sat down to taste through an exciting collection of wines with Derek Mossman. Garage Wine Co produces wines from Maipo and Maule, and their trademark is wines with great freshness and acidity from some seven vineyards they work. 42,000 bottles per year of highly personal and full of character wines. I later met with Mossman again to walk some of the vineyards for where he sources grapes for some of his Maule cuvées and the work he's doing there to support the local 'huasos' and their vineyards is remarkable. The common thing that I've seen between Mossman, Cancino, Luyt, Parra and the other guys working in the south is respect -- for the people, the traditions and the places. These are wines of respect. An exciting project to keep in mind.

La primera cosecha sumó apenas dos barricas y la bebieron entre los amigos, algunos de ellos incluso compraron parte de esa producción. Hoy hacen unas 45 mil botellas de once vinos distintos, cada uno de parcelas definidas. De hecho, Mossman define Garage Wine Co. como una gestión que, desde su génesis, tuvo su foco en parcelas más que en cepas. “La gracia siempre fue separar las cosas y comparar. De ahí vienen los Lot” –dice Mossman. La filosofía de vinificación es simple. Más que vinos naturales, Mossman define a los suyos como “originarios”, inspirados en la sabiduría campesina, pero con aportes de conocimientos modernos de enología. El origen de sus parcelas o “Lot” comienza en Alto Maipo, pero después extendieron su interés a otras zonas, especialmente en el Maule, que es de donde viene gran parte de su catálogo. Se trata de carignanes de viejas parras en una zona muy cercana a la costa, sobre suelos graníticos. Este vino, como todos los tintos de Garage en la línea Lot y en Vigno, se cría por “dos inviernos” en barricas, las más nuevas de tres años de uso. “Cuando vas a comprar vinos por la zona, los viejos te dicen que el vino que lleva dos inviernos de crianza es el mejor” –dice Mossman. El resultado es el tinto clásico que se necesita para refrescar una tarde de asado con los amigos. Su acidez es intensa, pero también su lado terroso y su textura punzante.

The 2011 Lot #34 Carignan from the Maule Valley is produced from the fruit of dry-farmed, head-pruned old vines. It is bright ruby-colored with a serious nose mixing tree bark aromas, red and black fruit, licorice and subtle spices. The Carignan is blended with some Grenache and Mataró. The palate is fluid with good acidity and medium body – pure, fresh, delicious Mediterranean wine. This is a great, elegant blend. 93 pts Drink now-2019

Wine Advocate note about Garage Wine Co.
The Garage Wine Co. literally began in Derek Mossman’s garage with just eight barrels and is his project together with his wife Pilar Miranda and a friend, Doctor Alvaro Pena. Mossman, a native Canadian, is one of the founding members of MOVI, the association of independent winegrowers. They source Cabernet from Maipo and Carignan from Maule. One of the most impressive new names in Chile. I tasted their wines on different occasions. I should make sure to sit down and taste and discuss the whole line-up with Mossman next time ‘round, as I found the wines intellectually enriching and want to understand them better.

The 2008 Lot #17 Old Vine Carignan
Field Blend includes unknown amounts of Cabernet Franc and Malbec sourced from a 65-year-old parcel and aged in neutral oak. Purple in color with a captivating nose of exotic spices, incense, wild berries, and floral notes, in the glass it opens to reveal a complex, rich, layered wine packed into a medium- bodied frame. Give it 5-6 years to reveal its full potential and drink it from 2016 to 2023. 92 pts Parker

In a Nutshell:

  • 1 of 11 wines we make from single parcels
  • Grower / partner Solar family
  • Alluvial like the Bagual Vineyard where the Carignan blend hails from but a separate parcel further from the banks of the Perquilauquen river. This vineyard has two deep esteros on each side that lend it terrific drainage.
  • Near the banks of the Perquilauquen river. A river that (very unusual for Chile!) flows from the Coastal Mountains East towards the Andes passing through Caliboro bringing granitic silt with it. East of Caliboro it turns North and then West joining the Loncomilla and then the Maule river and on out to the Pacific.
  • The Perquilauquen is wide through this section like a narrow lake and this water body lends the fruit cooler conditions than neighboring Melosal or Loncomilla.

  • Maule in 2016 was an almost optimal year if you picked before the rain. What began with worries about the lack of rainfall turned into a terrific quality fruit. On our parcels specifically improvements with control of mildew on the Carignan (Oidio) made for improvements which offset less rain falling which should have led to lower yields in the secano. If one manages parcel by parcel, culivating the soil properly, the rains of any given year do not have the heightened pendulum effect many asume they should.

Bagual Vineyard Garnacha Field Blend 2015 Lot #79 – 94 Pts
The 2016 Bagual Vineyard Garnacha Field Blend is floral, expressive and perhaps radically different, with notes I've never found in previous vintages. It was harvested very early, because ripening was very fast, and it has great tension on the palate (it has 7.17 grams of acidity!). The bunches of Garnacha here are very small, as Garnacha can be very variable. 2,584 bottles were filled in December 2017.

The Garage Wine Co. team doesn't stop innovating; other than the new labels, I also previewed some unbottled Sémillon (with and without skins) from 2018. This Sémillon will be their second white, which they never really pictured before, after a blanc de noirs País!

Desde Bagual, en el secano del Maule, esta es una garnacha injertada sobre país que es tal salvaje como su entorno de lomajes, vegetación de sol y calores extremos. Es impresionante cómo las parras pueden vivir allí, solo con el agua que obtienen de la tierra y de la lluvia. Este es hijo del rigor, una garnacha profunda en madurez, con textura tremenda, tensa, se agarra a la lengua y no la suelta más. Es un vino grande para comida grande.

The 2015 Bagual Vineyard Garnacha Field Blend shows the heat of the vintage. I think these grapes from Caliboro tend to show quite ripe in warm years, and this is not an exception. It has the Caliboro firm tannins, and I feel this wine might benefit from some more time in bottle.

Bagual Vineyard Maule Valley Garnacha Field-blend 2014  - Lot # 59 – 92 Pts
The 2014 Bagual Vineyard Garnacha Field Blend uses fruit from Caliboro in Maule in partnership with the Solar family. The Carignan, Garnacha and Mataró field blend is near the banks of the Perquilauquen river, a river that, very unusual for Chile, flows from the Coastal Mountains east towards the Andes, passing through Caliboro, bringing granitic silt with it. East of Caliboro, it turns north and then west joining the Loncomilla and then the Maule river and on out to the Pacific. This is 14.9% alcohol with an incredible pH of 3.08 and 6.38 grams of acidity. As all the single vineyard bottlings, it matured in well-seasoned French oak barrels over two winters. It's riper and headier, with a little more body from the Syrah. Very tasty and with a long, supple finish. None of these wines show any oak whatsoever. 2,222 bottles produced. It was bottled in December 2015.

Seamless, penetrating and appealingly sweet, offering palate-staining red and blue fruit liqueur and floral pastille flavors and an exotic flourish of five-spice powder. Bagual Vineyard Maule Valley Garnacha Field-blend 2013  - Lot # 49 – 91 Pts
The 2013 Lot #49 Bagual Vineyard Garnacha Field Blend is composed of 11 barrels of Garnacha and one of Syrah. The grapes are harvested from the Bagual Vineyard in Caliboro, in the Maule, where they regrafted some old plants to Garnacha' in 2013 they bottled a varietal Garnacha for the first time. Spicy, floral and subtle, it has a dark ruby color, darker than most Garnachas, a little earthy and organic. The palate is sinewy, with nice acidity and the fine tannins of the Garnacha, perfectly integrated oak and a very tasty finish. Some 3,800 bottles produced.

In a Nutshell:

  • Single Ferment Series wines include fruit from more than one parcel or vineyard site and are (co-fermented) ¨in one singular ferment ¨ Sometimes all the fruit does not enter the tank at same time and we simply stack on top of the fermenting tank when the next fruit is ripe -- one single ferment one single wine. (two vineyard sites in Portezuelo and Guarilihue)
  • For years we watched as the small farmers with whom we grow the parcel wines were forced to accept prices fixed [illegally] by agro-giants far below their costs for working the earth. So we developed Single Ferments as a dignified means of getting more of their wonderful fruit made into wine for export. The wines are affordable yet we still manage to pay a bonafide price to the farmers.

 

Winemaking:

  • Ancestral farming by hand and horse
  • Naturally fermented with native yeasts
  • Open top fermenters. Caps were punched down by hand. Pressing manual.
  • No temp control (besides opening closing windows) open tank, no nada
  • Pinch of sulfites after Malolactic that normally finishes a full 7 months after harvest with next summer´s heat

The 2017 Single Ferment Series Cinsault has an addition to its name on the label, The Reset Ferment, which is a reference to a reset after the terrible fires from the year. This is definitely more serious than previous editions, possibly a result of the severe selection to avoid smoke. It comes from two vineyards, one in Portezuelo (where the berries are very small) and the other one in the vicinity of Guarilihue. There is an aromatic touch here and a light to medium palate with very fine tannins. 3,543 bottles were filled in February 2018.

Tiene la suavidad de la cepa, pero también la cascada de sabores a frutas rojas. Uno para beberlo por litros.

Cinsault 2016 Single Ferment Secano Interior Portezuelo – La Vidente Ferment – 89 Pts
The 2016 Single Ferment Series Cinsault was also available for tasting. In this second year they used more fruit from Guarilihue and less from Portezuelo, and it seems like they didn't like the change very much. It has some aromas of cotton candy, a little lighter. This is more easy-drinking, but at the same time it has more minerality.

Cinsault 2017 Single Ferment Secano Interior Portezuelo – The Soothsayer’s Ferment– 90 Pts
The first Cinsault I tried from Garage is part of a co-fermented series, the 2015 Single Ferment Series Cinsault The Soothsayer's Ferment, that aged for a single winter in barrel, with each carrying its own name. It's sold under the D.O. Secano Interior and is sourced from Portezuelo and Guarilihue in Itata. It's light colored and bright with a nose mixing wild berries and some organic, earthy notes. The palate is light and fresh, with an absence of tannins and a pleasant bitterness in the finish. Compared with the 2016, this is more concentrated and tasty, with more fruit from Portezuelo. A more serious Cinsault from Itata.

"2015 was a tannic year, and the 2015 Portezuelo Vineyard manages to keep its poise. This is always very balsamic, and in this vintage, it feels super varietal, with the tree bark-like rusticity of the Cariñena and a slightly dusty personality. After some time in the glass, it takes off with lots of aromatic herbs and flowers." – LG

Carignan from Itata with notes of Cinsault  Earthy with a touch more funk and or jazz

Field-blend aprox:
Carignan - 7 barrels
Cinsault  - 1 barrel

This wine was grown by a small farmer in Itata. It was farmed by hand and horse with traditional methods of dry-farming old vines with vines of Cinsault in the field-blend.

It was fermented naturally in small tanks with open-tops. Caps were punched down by hand and pressing was strictly manual. The wine was aged in barrels over two winters— barrels of two or more uses.

This wine is a tribute to the resilience of the ploughmen farmers of the Secano Interior who have been stewards of the vines since colonial times. Portezuelo was the site of the first winery in Chile. The 68th wine we have bottled since 2001 it is thus labelled Lot # 68.

In a Nutshell

  • Singular wine made from a small parcel with ancestral farming by hand and horse of the Secano Costero
  • Naturally fermented with native yeasts in open top fermenters using punch-down
  • Barrel-aged two winters in French Barrels (various cooperages, 2 + uses-- no new wood)

2015 was a tannic year, and the 2015 Portezuelo Vineyard manages to keep its poise. After some time in the glass, it takes off with lots of aromatic herbs and even flowers. This is lot number 68. 2,450 bottles were filled in December 2016. They didn't manage to produce this wine in the rainy 2016 vintage, so we'll have to wait for 2017 and 2018.

The 2014 Portezuelo Vineyard, a Cariñena field blend planted in the early 1940s with some Cinsault from the Lavin family in Itata. The vineyard is on the initial slopes of the Coastal Range and enjoys shade early in the afternoon due to its exposure facing east. It compensated for the relative warmer temperatures from Portezuelo. Some people dismiss it because it's a warm place, but it really keeps the freshness. It's more Mediterranean with notes of dried herbs and spices, quite balsamic. The palate has the austerity and tastiness of the granite. 2,170 bottles were filled in December 2015. Portezuelo Vineyard D.O. Itata Valley Carignan, Field-blend 2013  - Lot # 48 – 92 Pts
As most of the Garage wines from the south, this is a Cariñena field blend with some Cinsault. The nose shows some wild herbs, flowers, spices and something earthy. There is less acidity in this wine from Itata than in most of the other examples from Maule; the wine feels fleshy and juicy, with very fine tannins and some grip. More accessible for those that might not want citric acidity in their reds. This is the first Garage Wine release from Itata. Some 3,700 bottles produced.  Drink 2015 – 2021 Luis Gutierrez

Single Ferment Series

When GWCo saw it’s Carignan growers being paid paltry sums for their other fruit: Pais & Cinsault, we began acquiring small bits from

various farmers to experiment. We paid bonafide prices that allowed for the traditional field works of cultivating the soil properly to continue. Commercial bottlings of “Single Ferments” began with serendipity when we simply could not resist not one but three small bits of Cinsault and then promptly ran out of tanks to ferment them in. With no

where to put all three, we simply stacked the second bit of newly harvested fruit on top of the first already fermenting—and then the third. In one elongated single fermentation we made a wine that we loved. So we continued and adopted the same technique with Pais!

How did we make the wines back then? (Vs Now)
We have always made the wines in open-top fermenters. We have always punched the caps down by hand. Pressing: manual.

Yeasts have not always been native– this began more strictly when we began working in a renovated 1840 cellar where commercial yeasts have never been used.

To our way of thinking, the wines personalities’ have always been well defined on the vine.

The older bottlings were small parcels that fit on our pickup’s trailer and in small stainless tanks of 1900-2200 kgs.

Labels
Why stencils and silk screening? And why wax?

When we began bottling wine in 2001 there was no digital printing and short runs of 500 labels were prohibitively expensive. So we learned to paint / silk-screen bottles. Luis our bottle painter has been with us for more than a decade.

When a capsule company insisted we bought 1o,ooo or nothing we sought another solution. A small school supplies / crayon manufacturer had wax that served to seal and was food grade certified. As he was there for us without a minimum and all the colours we wanted we have never given up on him. Today many buy his wax large medium and small.

Tom Sawyer clause : toward full disclosure we must point out that over the past few years, friends, family and students’ of Alvaro’s from the University of Chile have begun helping with some of the grunt work. In this way the pace, rhythm and treatment of the wines remains the same, and we receive a lot of apples.


the Parcels

What is a parcel?  When we began looking for fruit in the Maule we wanted to experiment. We began sourcing fruit from different small parcels generally from farmers who worked with a horse and plough. We made each wine separately to see how the soils and climates expressed themselves differently. They did-- very differently, so we decided not to blend them and instead built our portfolio [and company] upon these parcels : Las Higueras, Bagual, Sauzal, Truquilemu, Portezuelo... Today we make wines from 11 different parcels some as small as 18oo +/- bottles and others as large as 75oo +/- per vintage. They range from about  .6 Hectare to 1.9 hectares.

 

What is a Lot? A lot is genuine Lot ie the bottling of the vintage of one particular parcel. Ej. Sauzal Vineyard, 2016 was Lot 75. We began bottling wine in 2001 and we have numbered each bottling since then with a lot number: Lot 1, Lot 2, Lot 3 and so on. Seventeen years later one of our latest releases is Sauzal Lot 75 -- that is to say the 75th bottling we have done since we began in 2001. To make things simpler each parcel always ends in the same digit every year. Ej.  Sauzal always ends in a 5.
