Story of The Fieldcraft Bottlings

The Secano Interior, or dry-farmed interior, is the cradle of Chilean viticulture dating back to the 1500’s. Revived attention in wines from what are some of the oldest pre-phyloxera vines on the planet has led to interest and investment, but the machinations of the modern world do not always mesh with the gearing of the old.  At Garage Wine Co. we have worked with small farmers in the Secano Interior ploughing the vines and cultivating the land for years now. We have built our small firm together. The vignerons’ families have dry-farmed the Secano since colonial times, and not just their vineyards, but mixed farms of heritage seed wheat, free-range livestock, and local market gardening. Yet as South American wine exports have boomed over the last quarter century, it has grown increasingly difficult for these small growers to sell their grapes at a proper price.

Just imagine such old vineyards passed down over generations, imagine them today suffering from neglect. Not because they stopped making wonderful wine, but because the vineyards no longer connected with the modern world. They are too small to fill a truck, too far away from a paved road. They cannot be worked with a tractor nor can they be picked by a machine.

Modern buyers want more for less and they would have the small modernise: ie spray instead of cultivate, scale instead of focus, and above all reduce the cost of labour. But the labour is precisely where you find the wisdom of farming passed down through the years: the fieldcraft if you will.

At the Garage Wine Co. we think the wine trade is stronger with the small farmers in it—and the wines are too. In a world that wants more sustainably grown foods, these farmers have a 400+ year head-start.

The Vineyards:

- two vineyard sites in Portezuelo and Guarilihue 60+ years old
- 1,5 hectares + 4 hectares
- old bush-head vines
- granitic soils with lots of quartz
- 1,5 kg per plant / 4,5oo -  kgs per hectare

In a Nutshell:

  • For years we watched as the small farmers with whom we grow the parcel wines were forced to accept prices dictated by the mainstream agro-giants far below their costs for working the earth. So we developed Single Ferments as a dignified means of getting more of their wonderful fruit made into wine for export. The wines are affordable yet we still manage to pay a bonafide price to the farmers.
  • Single Ferment Series wines include fruit from more than one parcel or vineyard site and are (co-fermented) ¨in one singular ferment ¨ Sometimes all the fruit does not enter the tank at same time and we simply stack on top of the fermenting tank when the next fruit is ripe -- one single ferment one single wine. (two vineyard sites in Portezuelo and Guarilihue)

Winemaking:

  • Ancestral farming by hand and horse
  • Naturally fermented with native yeasts
  • Open top fermenters. Caps were punched down by hand. Pressing manual.
  • No temp control (besides opening closing windows) open tank

T a s t i n g   N o t e s

House note:

Dark plums, wet earth, cedar and baking spices. This is a full-bodied cinsault that draws out a round and generous palate, through dark cherries and juicy tannins. Heaps of fruit but with a completely different architecture – this is not a glou glou terrace wine and it does not have carbonic maceration.

Ageability

2018 vintage will age 5-6 years, but the wine is made to be enojoyed beginning today upon release in 2020

Perspective: Our 2015 is beginning to display some tertiary notes and demonstrate that Cinsault can have the architectural structure to improve over several years.

Para Soothsayers Single Ferment Series se seleccionan dos parcelas en Itata, una en Portezuelo y la otra en Guarilihue. El vino se cría por un año en barricas y muestra cómo el cinsault tiene una capacidad impresionante para mostrar estructura, para crear un cuerpo construido a partir de taninos que se perciben firmes y severos, penetrantes y algo rústicos. Una textura para nada habitual en esta cepa, más relacionada con vinos fáciles y frutales. Este es frutal, pero con una arquitectura completamente distinta, hecha de concreto.

Winemaker Derek Mossman told me the 2018 Cinsault The Soothsayers Ferment from their Single Ferment Series was particularly interesting as it was more ambitious, but I find it too rustic and dark, with an unusual animal twist. The fruit gravitates toward the darker side of the spectrum, and it resembles a Cariñena more than a Cinsault. The palate has some powdery tannins and a dusty texture. To be honest, it got me scratching my head; and while it’s not bad, it doesn’t fit the idea I had about this wine or the style of any previous vintage. I left the wine in the glass for a good couple of hours, and it transformed completely: that blackness disappeared, the animal-like aromas disappeared and the wine was completely different! The spark was back, the red fruit emerged and the granite resurfaced in the texture. What a transformation. Sometimes patience gets paid back. This is a completely different expression of Cinsault—more serious, more powerful. Decant for a couple of hours if it shows funny when you open it. 2,960 bottles produced. It was bottled in February 2019.

Cinsault 2017 Single Ferment Secano Interior Portezuelo – Reset Ferment – 92 Pts
The 2017 Single Ferment Series Cinsault has an addition to its name on the label, The Reset Ferment, which is a reference to a reset after the terrible fires from the year. This is definitely more serious than previous editions, possibly a result of the severe selection to avoid smoke. It comes from two vineyards, one in Portezuelo (where the berries are very small) and the other one in the vicinity of Guarilihue. There is an aromatic touch here and a light to medium palate with very fine tannins. 3,543 bottles were filled in February 2018.

Este cinsault viene de 2 parcelas, una en Hauro y la otra en Guarilihüe, ambas en el Valle del Itata. Y la fruta es deliciosa, fresca, viva. Tiene la suavidad de la cepa, pero también la cascada de sabores a frutas rojas. Uno para beberlo por litros.

Fermented naturally in amphora. Seeds were removed when they floated to the surface but skins remained in the juice for eleven months. This wine is a tribute to the resilience of the Semillon Variety in the Maule—forgotten and neglected for decades.

The Vineyard:

- 65+  yrs old
- 1 hectare
- decomposed granite
- old-bush head vines some cables mixed with Sauv Blanc
-Harvested manually with our GWCo crew painstakingly separating Sauvignon B. in the field
- 1 - 1,3 kg per plant / < 3,ooo kgs per hectare

Vintage Characteristics:

  • 2018 was an ideal vintage in many respects.
  • Beyond the weather and rains each harvest has other factors to weigh in.
  • In 2018 we had a full posse of people working with us that allowed us to prune, pick (or what have you) at our speed with our people. 2018 is the first year that this effect of community will be felt in the wines.

In a Nutshell

This wine was grown by a small farmer in the Maule. It was farmed by hand and horse with traditional methods of dry-farming 70+ year old vines with vines.

It was fermented naturally in amphora. Seeds were removed when they floated to the surface and skins remained in the juice for eleven months. This wine is a tribute to the resilience of the Semillon Variety in the Maule. It was the first Fieldcraft Wine that we made from a specific parcel so we made it Lot # F1

 

T a s t i n g   N o t e s

 House note:

Light blonde in color this wine smells of lemon, candle wax and bee pollen. In the mouth, lemon juice, candied lemon peel and a touch of bee pollen mixed with white flowers and honey (but without sweetness). Faint chalky texture and great acidity make this a mouthwatering package. Tasty and with time in the glass: vast. A portion of the wine sits on its skins for 11 months, but without oxygen for it is austere. 13.5% alcohol.

Ageability

This wine is made with skins, but very tightly wrapped without much oxygen. It has some serious phenolics. This is a white to age. We are going to put bottles away for a 2028 library release.

A new “proper” white here, the 2018 Isidore Vineyard Maule Valley Semillon could very well be the finest Semillon I’ve ever had from Chile. It comes from a vineyard between Cauquenes and Sauzal that the González family farms by hand and horse. In the field, it’s mixed with Sauvignon Blanc that was separated and sent to the local cooperative. Sixty percent of the volume fermented with skins in amphorae (tinaja) and the rest in tanks, all with native yeasts. The two parts matured separately for 11 months, and the part in amphorae went through malolactic, while the portion in stainless steel did not. It’s all wild flowers and herbs and smells of the wild countryside in the spring, with intoxicating notes of pollen and beeswax. You don’t really notice the skins of the amphorae; it’s just a little darker, but that’s all. It’s amazingly tasty, almost salty, a white for food that should develop nicely in bottle. This has 13.8% alcohol, high acidity and low pH, the wonders of decomposed granite soil and ancestral farming… 1,300 bottles were filled in January 2019.

A 100-year-old parcel supplies the fruit for this impressive Semillo?n, which spends 11 months on skins and is partly fermented in clay pots, or tinajas. Fresh, textured and assertive, it has some subtle reduction, lime and citrus fruit and some tannic grip. 2020-24

Este semillón viene de un viñedo viejo, en la zona de Sauzal. La mitad fue fermentada y criada en acero inoxidable y la otra, en tinajas de greda nuevas, con sus pieles, por 11 meses. El resultado es un vino muy fresco, con una acidez jugosa y taninos provenientes de esa maceración con las pieles y que le dan un agarre importante, pero sin exagerar. Este no es otro vino naranja imposible de beber, es un semillón de muy buen cuerpo para cerdo ahumado.

Single Ferment Series wines contain grapes from more than one vineyard, co-fermented to make one wine aged for a single Winter in older barrels. This particular ferment has grapes from Truquilemu, Sauzal & Purapel

The Vineyards:
- three vineyard sites in Truquilemu (1 hectare) and Sauzal (1.5 hectares) and Purapel  (1 hectare)
- 150 + years old bush-head vines
- granitic soils / sub-soils have cracked granite that allow roots to drink deep down
- on the Coastal Range of mountains (not the Andes) much older and more importantly much slower to cool than the Andes ie crystals granite quartz …

 

Vintage Characteristics:

  • 2018 was an ideal vintage in all -round weather-wise, but beyond the weather and rains each harvest has other factors to weigh in.
  • In 2018 we had a full posse of people working with us that allowed us to prune, pick (or what have you) at our speed with our people. 2018 is the first year that this effect of  community will be felt in the wines. We think you will agree that the ethereal effect of community shows through.

Color: Straw.

Variety: Pais from two farms Truquilemu and Sauzal, and Cariñena from Purapel 

Elaboration:

  • The only closed-fermenter wine we make.

Crianza:

  • Aged in stainless steel -- again, the only one we make.

House note:

This wine will likely surprise you as it did us when we first made it. It's surprisingly floral and aromatic, fresh and clean, with a vibrant palate, focused and delicious.

 

Ageability

2018 vintage will evolve for 2-3 years, but the wine is made to be enjoyed today upon release in 2020

Pais-Cariñena Phoenix Ferment 2018 Single Ferment - Secano Interior Cauquenes– 92 Pts

Their blanc de noirs contains a significant amount of Cariñena in 2018, so it is mentioned on the label of the 2018 País-Cariñena Phoenix Ferment from their Single Ferment Series, wines that continue to be sourced from more than one parcel or vineyard site and are (co-fermented) "in one single ferment." In the (interesting) words of winemaker Derek Mossman, "the idea is to make something like a live recording, hence without tweaking nor dubbing afterward and with multiple microphones"! The 2017 was quite successful, so they picked some more País from Sauzal and some Cariñena from the Purapel vineyard. They pressed the whole clusters, and the only available press was quite big, so they needed to use no less than 4,500 kilos of grapes. It's surprisingly floral and aromatic, fresh and clean, with a vibrant palate, focused and delicious. 2,871 bottles were filled in October 2018.

Un blanco hecho de tintos, este blend de 60% de país y 40% de cariñena, todo de viejas viñas en el secano del Maule y donde los racimos se prensan directo. Este vino se mueve por la boca con mucho frescor, acidez firme y algo de esa rusticidad de taninos que ambas cepas han dejado aquí, como un lindo recuerdo para acompañar mollejas.
